Tamale Pie

Polenta Topping

  • 6 cups water
  • 2 cups yellow cornmeal
  • 1 cup soy milk
  • 1/2 cup homemade vegan mozzarella
  • 2 tbsp garlic powder
  • Salt and pepper to taste

Filling

  • 1 onion
  • 3 cloves garlic
  • 4 golden potatoes
  • 1 bell pepper
  • 1 squash
  • 4 stalks of corn
  • 1 bunch of kale
  • 1 can black beans
  • 1 pack field roast Chipotle sausage
  • 2 tbsp Cumin
  • Salt and pepper to taste

1. Lightly char onions and garlic in pan.
2. Add vegetables (except kale and corn) and veggie broth
3. Cook vegetables in veggie broth until fully cooked.
4. Add black beans, corn, and kale, and sausage and cookout remaining liquid
5. In saucepan boil 6 cups of water
6. Add polenta and the rest of the Topping ingredients
7. In a pie or casserole dish add a layer of polenta, filling, and another layer of polenta.
